Description

This simple chickpea salad is perfect as a make-ahead lunch or simple side dish. It’s only a few ingredients and comes together in minutes!


Ingredients

  • 1 (15oz) can chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1 red or green bell pepper, seeded and chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice (about 1/2 lemon)
  • 1/4 teaspoon coarse salt or to taste
  • Pinch black pepper

Instructions

  1. Toss the chickpeas, red onion, bell pepper, garlic powder, and parsley in a large bowl.
  2. Drizzle with olive oil and lemon juice, then sprinkle with salt and pepper.
  3. Add additional salt to taste, if needed.

Notes

You can make this salad up to 2 days in advance.
