Description
This simple chickpea salad is perfect as a make-ahead lunch or simple side dish. It’s only a few ingredients and comes together in minutes!

- 1 (15oz) can chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1 red or green bell pepper, seeded and chopped
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons lemon juice (about 1/2 lemon)
- 1/4 teaspoon coarse salt or to taste
- Pinch black pepper
Instructions
- Toss the chickpeas, red onion, bell pepper, garlic powder, and parsley in a large bowl.
- Drizzle with olive oil and lemon juice, then sprinkle with salt and pepper.
- Add additional salt to taste, if needed.
