These delicious sesame soba noodles are ready in just 20 minutes for an easy dinner that is high in protein and completely plant-based!

- 6oz soba noodles
- 1 cup shelled edamame (I used frozen edamame)
- 1 large carrot, cut in matchsticks
- 4–5 medium radishes, sliced thinly
- 1/4 cup fresh cilantro leaves, chopped
- 2 tablespoons toasted sesame seeds
- 1 tablespoon toasted sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon sriracha
- 1 teaspoon maple syrup
- 1/4 teaspoon garlic powder
Instructions
- Heat a medium to large pot of salted water.
- Cook soba noodles according to package directions until just chewy, typically about 7-8 minutes.
- Once cooked, drain and rinse noodles in lukewarm or cool water.
- Cook the edamame according to package directions. (I typically boil frozen shelled edamame in water for 2-3 minutes, but you can also cook them in the microwave.)
- Combine all dressing ingredients in a small bowl or measuring cup and whisk until incorporated.
- Add the noodles, vegetables, and dressing to a bowl. Toss to coat everything.
- Serve immediately with chopped cilantro and sesame for a warm meal, or store this in the fridge and enjoy it cold.
