Description

These delicious sesame soba noodles are ready in just 20 minutes for an easy dinner that is high in protein and completely plant-based!


Ingredients

  • 6oz soba noodles
  • 1 cup shelled edamame (I used frozen edamame)
  • 1 large carrot, cut in matchsticks
  • 45 medium radishes, sliced thinly
  • 1/4 cup fresh cilantro leaves, chopped
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sriracha
  • 1 teaspoon maple syrup
  • 1/4 teaspoon garlic powder

Instructions

  1. Heat a medium to large pot of salted water.
  2. Cook soba noodles according to package directions until just chewy, typically about 7-8 minutes.
  3. Once cooked, drain and rinse noodles in lukewarm or cool water.
  4. Cook the edamame according to package directions. (I typically boil frozen shelled edamame in water for 2-3 minutes, but you can also cook them in the microwave.)
  5. Combine all dressing ingredients in a small bowl or measuring cup and whisk until incorporated.
  6. Add the noodles, vegetables, and dressing to a bowl. Toss to coat everything.
  7. Serve immediately with chopped cilantro and sesame for a warm meal, or store this in the fridge and enjoy it cold.
