This pesto quinoa salad is packed with fluffy quinoa, creamy mozzarella, juicy tomatoes, briny artichokes, and tangy roasted red peppers! It’s an easy make-ahead side salad!


Units Scale
  • 2 cups cooked quinoa
  • 1 cup halved cherry tomatoes
  • 1/4 cup pesto
