For the salad
- 2 ears of corn (still in the husk)
- 2 ripe peaches, chopped
- 2 cups cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons finely chopped basil
For the dressing
- 2 tablespoons olive oil
- 1 teaspoon lime juice or lemon juice
- 1 teaspoon honey
- 1/4 teaspoon salt
Instructions
- Place the two ears of corn in the microwave with the husks on and cook for 3 minutes. Let cool slightly, then remove the husk and silk. Cut the kernels from the cob.
- In a large bowl, combine the corn, peaches, and cherry tomatoes.
- Top with feta and basil.
- In a small bowl or jar, whisk together the olive oil, lime or lemon juice, honey, and salt.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
