- 1 cucumber, diced
- 2 cups cherry tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon fresh lemon juice
- 1 teaspoon red wine vinegar
- 1 tablespoon fresh mint, chopped
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon dried oregano
- Salt to taste
Instructions
- Combine the cucumber, cherry tomatoes, olive oil, lemon juice, red wine vinegar, mint, oregano, parsley, and salt into a bowl.
- Adjust salt to taste.
- Serve with pita chips.
Notes
Allow the flavors to meld together in the refrigerator for at least 30 minutes before serving, if possible.
