Description

This Mediterranean-inspired salsa is a delicious dip for pita chips or tortilla chips! It’s easy to make and it’s a tasty healthy side dish — perfect for a party.


Ingredients

  • 1 cucumber, diced
  • 2 cups cherry tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon red wine vinegar
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon fresh parsley, chopped

  • 1/4 teaspoon dried oregano
  • Salt to taste

Instructions

  1. Combine the cucumber, cherry tomatoes, olive oil, lemon juice, red wine vinegar, mint, oregano, parsley, and salt into a bowl.
  2. Adjust salt to taste.
  3. Serve with pita chips.

Notes

Allow the flavors to meld together in the refrigerator for at least 30 minutes before serving, if possible.
