Description

These lemon blueberry overnight oats are a great make-ahead breakfast! They’re a good source of protein, and they come together with just a few minutes of prep.


Ingredients

  • 2/3 cup blueberry Greek yogurt
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup almond milk or dairy milk
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1 teaspoon lemon zest (about half a lemon)
  • 1 teaspoon maple syrup (optional)
  • Pinch of salt
  • 1/2 cup blueberries, for topping

Instructions

  1. Add the oats, chia seeds, and salt to a jar and stir to combine.
  2. Add the yogurt, milk, lemon zest, lemon juice, vanilla, and maple syrup. Stir well so the chia seeds don’t clump at the bottom.
  3. Cover and refrigerate overnight, or at least 4 hours.
  4. Stir and add a splash more milk if you want it looser. Top with fresh blueberries.
