Description

These garlicky white beans are a quick and delicious side dish, packed with protein and fiber! Made with creamy cannellini beans, plenty of garlic, and spicy crushed red pepper flakes, this recipe brings out the best flavors of these simple ingredients!


Ingredients

  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 3 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 2 (15oz) cans cannellini beans, drained and rinsed
  • 1 tablespoon lemon juice
  • Salt to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. In a large non-stick skillet, heat the olive oil over medium heat for 30 seconds.
  2. Add the diced shallot, minced garlic, and crushed red pepper flakes. Cook for 3-4 minutes, stirring occasionally, until the shallot becomes translucent and the garlic is fragrant.
  3. Add the drained and rinsed cannellini beans to the skillet. Continue to cook for another 3-4 minutes, stirring occasionally, until the beans are heated through.
  4. Remove the skillet from heat, season the beans with salt and lemon juice to taste.
  5. Transfer the beans to a serving bowl and toss with fresh parsley if desired.
