Description

These flourless almond butter cookies are perfectly chewy, naturally sweetened, and made with only 5 ingredients! Try this recipe for a quick and healthy dessert.


Ingredients

  • 2/3 cup salted creamy almond butter (see note)
  • 1/3 cup oat flour (oats, blended into flour)
  • 2/3 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 tsp baking soda

Instructions

  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper or a silicone baking mat.
  2. In a large bowl, combine the oat flour, almond flour, and baking soda. (Add 1/4 teaspoon of salt if the almond butter is unsalted.) Stir to evenly distribute.
  3. Add the maple syrup and almond butter. Stir vigorously until smooth.
  4. Continue stirring until dough becomes stiff and holds its shape. If the dough is too sticky, add 1-2 tablespoons of almond flour.
  5. Scoop rounded tablespoons of dough using a cooking scoop or roll into balls between your hands.
  6. Place the cookies 2-3 inches apart on the prepared baking sheet. Repeat with all the dough.
  7. Bake for 12-13 minutes or until edges slightly darker brown.
  8. Remove from the oven and allow to cool for at least 5 minutes on the baking sheet before transferring to a cooling rack to cool completely.

Notes

When using natural almond butter, be sure to stir the almond butter so the consistency is even and all the oil has been incorporated before measuring into the measuring cup.

If your almond butter is unsalted, add 1/4 teaspoon salt to the recipe.

You can use a fork to make a crisis cross pattern on top if desired.
