Description
This vegan apricot pecan bread is the perfect combination of sweet and nutty flavors, making it an excellent treat for breakfast, a snack, or even dessert!

- 3/4 cup dried apricots, chopped
- 1 cup chopped pecans
- 2 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/3 cup avocado oil
- 3/4 cup almond milk
- Zest of 1 orange
- 1/4 cup orange juice
Instructions
- Preheat oven to 350 degrees. Line a 9” x 5” loaf pan with parchment with over hang in at least one direction for easy removal.
- In a large bowl, combine flour, baking powder, baking soda, sugar, cinnamon, and salt. Stir to evenly distribute.
- Make a well in the center and add almond milk, avocado oil, and orange zest. Stir until partially incorporated.
- Add in the orange juice, apricots, and ¾ cup of the chopped pecans and stir until evenly distributed and all flour pockets are gone.
- Scrape into prepared pan and level out. Sprinkle reserved ¼ cup chopped pecans on top.
- Bake for 50-60 minutes, until golden brown on the edges, set in the center and skewer inserted comes out clean.
- Allow to cool in the pan for at least 20 minutes before transferring to a cooling rack.
