Description

This cheesy soup is loaded with broccoli and cauliflower for a satisfying meal that is secretly healthy! If you’re craving hearty comfort food, this soup is the solution!

Ingredients

Units Scale
  • 2 tablespoons butter
  • 1 large onion, diced
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 medium garlic cloves, minced
  • 1/2 teaspoon thyme
  • 1/4 cup flour
  • 6 cups vegetable broth
  • 1 pound broccoli, florets roughly chopped into 1-inch pieces,
  • 1 lb cauliflower chopped into 1-inch pieces
  • 4 ounces sharp cheddar cheese, shredded (1 cup)

Instructions

  1. Heat the butter in a large pot or Dutch oven over medium-high heat.
  2. Add onion, celery, and carrots and cook, stirring frequently, for about 10 minutes.
  3. Add garlic and continue to cook for one minute.
  4. Add flour and continue to cook for two minutes, stirring until the flour evenly coats the vegetables.
  5. Add the broth, broccoli, and cauliflower. Cover and increase heat to high until simmering.
  6. Reduce heat to low and simmer until broccoli and cauliflower are very soft, about 20 minutes, stirring occasionally during cooking.
  7. Allow the soup to cool slightly, then add the cheese and use an immersion blender to blend until slightly chunky. (If you do not have an immersion blender, carefully transfer the soup to a blender, add cheddar, and process until smooth, about 1 minute. Be sure to allow steam to escape through the blender vent.)
  8. Return soup to Dutch oven and reheat if needed. Season with salt and pepper to taste.
