Description
This crazy feta dip is flavorful and spicy. Enjoy this simple 4-ingredient dip with pita chips or serve it on top of a grain bowl!
Ingredients

- 1–2 small jalapeños
- 1/4 red onion, soaked in cold water for 10 minutes (see note)
- 8oz block feta cheese
- 1 tablespoon olive oil
- 1–2 tablespoons water, if needed
Instructions
- Add the jalapeño and red onion to a food processor.
- Pulse until finely chopped.
- Transfer the chopped vegetables to a small bowl.
- Add the feta to the food processor.
- Blend on high. While blending, drizzle in the olive oil to incorporate.
- If the mixture is clumpy, add 1-2 tablespoons of water and blend until mostly smooth.
- Add the chopped vegetables back to the food processor and pulse 3-4 times to incorporate.
- Serve immediately or store in an airtight container in the fridge for up to 3 days.
Notes
Soaking the red onion in cold water helps tame the sharpness of the red onion. I recommend this step to mellow the flavor.
