Description

This crazy feta dip is flavorful and spicy. Enjoy this simple 4-ingredient dip with pita chips or serve it on top of a grain bowl!


Ingredients

Scale
  • 12 small jalapeños
  • 1/4 red onion, soaked in cold water for 10 minutes (see note)
  • 8oz block feta cheese
  • 1 tablespoon olive oil
  • 12 tablespoons water, if needed

Instructions

  1. Add the jalapeño and red onion to a food processor.
  2. Pulse until finely chopped.
  3. Transfer the chopped vegetables to a small bowl.
  4. Add the feta to the food processor.
  5. Blend on high. While blending, drizzle in the olive oil to incorporate.
  6. If the mixture is clumpy, add 1-2 tablespoons of water and blend until mostly smooth.
  7. Add the chopped vegetables back to the food processor and pulse 3-4 times to incorporate.
  8. Serve immediately or store in an airtight container in the fridge for up to 3 days.

Notes

Soaking the red onion in cold water helps tame the sharpness of the red onion. I recommend this step to mellow the flavor.
