Cottage Cheese Cinnamon Rolls

Description

These soft and fluffy cinnamon rolls are perfectly sweet and secretly healthy! Made with just a few ingredients, this is a healthy twist on a classic treat!


Ingredients

  • 1 cup cottage cheese (I used 4%)
  • 1 1/2 cups self-rising flour (see note)
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons brown sugar or coconut sugar
  • 1 teaspoon cinnamon
  • 1/3 cup powdered sugar
  • 12 teaspoons milk

Instructions

  1. Preheat your oven to 350 degrees. Spray a small baking dish with non-stick spray. (I used a 6×8 dish)
  2. Blend the cottage cheese in a blender or food processor until mostly smooth.
  3. In a bowl, combine the blended cottage cheese and self rising flour until a ball forms.
  4. Roll the dough out on parchment paper into a thin sheet. (It should be about 10×12)
  5. In a small bowl, combine the coconut oil, brown sugar, and cinnamon.
  6. Sprinkle the brown sugar mixture over the dough.
  7. Roll the dough into a log and slice into 1 ½” pieces. It should make 6 cinnamon rolls. (You can discard the uneven edges.)
  8. Bake for 30-32 minutes, or until the edges and tops begin to brown.
  9. While the rolls are cooling, whisk together the powdered sugar and milk in a small bowl until smooth. Adjust the milk for your desired consistency.

  10. Let the cinnamon rolls cool for 5-10 minutes before drizzling the glaze over the top. Serve warm and enjoy!

Notes

If you don’t have self-rising flour, you can make your own! Combine 1 1/2 cups all-purpose flour, 2 1/4 teaspoons baking powder and 1/2 teaspoon salt. This will make slightly more than 1 1/2 cups of self rising flour.
