These vegan cinnamon sugar muffins are light and fluffy with plenty of sweet, cinnamon flavor! These are perfect for breakfast on the go or enjoy them as an afternoon snack!

- 1 cup granulated sugar, plus 2 tablespoons for topping
- 3 teaspoons cinnamon
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup coconut oil, melted
- 3/4 cup almond milk or non-dairy milk
- 1/2 cup applesauce
- 1 teaspoon vanilla
Instructions
- Preheat the oven to 350 degrees.
- Combine 2 teaspoons of cinnamon with 2 tablespoons of sugar and set aside.
- In a large bowl, combine the flour, 1 teaspoon cinnamon, 1 cup granulated sugar, baking powder, and salt.
- Add the coconut oil, non-dairy milk, applesauce, and vanilla.
- Stir until just combined. Do not over mix.
- Fill muffin cups 2/3 of the way full. It should make 12 muffins.
- Top each muffin with the cinnamon sugar mixture.
- Bake for 19-21 minutes until golden brown.
