Cauliflower Mashed Potatoes

Description

This creamy cauliflower mash will remind you of mashed potatoes, but it’s lower in carbs and calories! It’s a great way to enjoy a satisfying side dish while filling your plate with veggies.


Ingredients

Scale
  • 1 large head of cauliflower (about 2 lbs) chopped into 1″ pieces
  • 2 tablespoons vegan butter (or regular butter, if not vegan)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  1. Add the cauliflower to a large pot and add 2 cups of water.
  2. Cook on high, steaming the cauliflower for 10-12 minutes until fork tender.
  3. Drain the cauliflower and transfer to a food processor.
  4. Add in the butter, garlic powder, and salt and blend for 1-2 minutes until mostly smooth.
  5. Add additional salt and pepper to taste.
