- 1 tablespoon olive oil
- 1 small yellow onion, minced
- 5 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 6oz tomato paste
- 1 1/2 cups vegetable broth
- 2 (15oz) cans butter beans, drained
- 1/4 cup heavy cream
- 1 tablespoon lemon juice
- 2 cups chopped kale (stems removed)
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large pot over medium heat for 30 seconds.
- Add the onion and cook over medium heat for 4 minutes, stirring frequently.
- Add the garlic, tomato paste and red pepper flakes and continue to cook for 2 minutes.
- Add the vegetable broth and butter beans.
- Bring to a boil then simmer for 7 minutes until the sauce has thickened.
- Stir in the cream, kale and lemon juice, and stir. Cover and let it sit for a few minutes until the kale is wilted, then top with Parmesan cheese and enjoy!
