Description

This tasty dish is made with large butter beans and a simple homemade cream sauce that comes together in just 20 minutes! This recipe is the perfect healthy comfort food.


Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, minced
  • 5 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes
  • 6oz tomato paste
  • 1 1/2 cups vegetable broth
  • 2 (15oz) cans butter beans, drained
  • 1/4 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 cups chopped kale (stems removed)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat for 30 seconds.
  2. Add the onion and cook over medium heat for 4 minutes, stirring frequently.
  3. Add the garlic, tomato paste and red pepper flakes and continue to cook for 2 minutes.
  4. Add the vegetable broth and butter beans.
  5. Bring to a boil then simmer for 7 minutes until the sauce has thickened.
  6. Stir in the cream, kale and lemon juice, and stir. Cover and let it sit for a few minutes until the kale is wilted, then top with Parmesan cheese and enjoy!
