Description

These Brown Butter Oatmeal Chocolate Chip Cookies are soft and chewy with a hint of toffee flavor and plenty of chocolate. These are a tasty treat for the holidays and beyond!


Ingredients

  • ½ cup unsalted butter
  • 1 cup coconut sugar or brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ⅓ cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large skillet, melt the butter over medium heat. Continue to cook over medium heat, whisking occasionally, until the butter is golden brown in color, about 3-4 minutes. You should see little browned bits at the bottom. Remove from heat.
  3. In a large bowl, combine the coconut sugar and browned butter.
  4. Once the mixture has cooled, stir in the egg and vanilla.
  5. Add the flour, rolled oats, baking soda, baking powder, salt, and chocolate chips.
  6. Scoop into rounded tablespoons and place them 3-4 inches apart on a baking sheet.
  7. Bake for 8-9 minutes until browned.
  8. Remove from the oven and wait 3-5 mins before transferring to a cooling rack.
