These Brown Butter Oatmeal Chocolate Chip Cookies are soft and chewy with a hint of toffee flavor and plenty of chocolate. These are a tasty treat for the holidays and beyond!

- ½ cup unsalted butter
- 1 cup coconut sugar or brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- ½ cup rolled oats
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup semi-sweet or dark chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a large skillet, melt the butter over medium heat. Continue to cook over medium heat, whisking occasionally, until the butter is golden brown in color, about 3-4 minutes. You should see little browned bits at the bottom. Remove from heat.
- In a large bowl, combine the coconut sugar and browned butter.
- Once the mixture has cooled, stir in the egg and vanilla.
- Add the flour, rolled oats, baking soda, baking powder, salt, and chocolate chips.
- Scoop into rounded tablespoons and place them 3-4 inches apart on a baking sheet.
- Bake for 8-9 minutes until browned.
- Remove from the oven and wait 3-5 mins before transferring to a cooling rack.
