This blueberry oatmeal recipe is filled with creamy oats, fresh berries, and crunchy almonds for a breakfast that will keep you full! This simple recipe can be made in the microwave, so it’s quick and easy for busy mornings.

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup almond milk
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2–3 teaspoons brown sugar, depending on desired sweetness
- Pinch of salt
- 1/2 cup blueberries, fresh or frozen
- 1 tablespoon sliced almonds
Instructions
- Add the oats, milk, water, vanilla, cinnamon, brown sugar, and salt to a large microwave-safe bowl and mix it together.
- Microwave for 2 1/2-3 minutes on 70% power. You may need to adjust slightly based on your microwave. By not cooking at full power, you can avoid the oatmeal boiling over
- After 2 1/2 minutes, carefully remove the oats from the microwave (the bowl will be very hot!) and stir vigorously. Let it sit for 1-2 minutes to thicken.
- Once the oatmeal is cooked, stir in the blueberries and top with sliced almonds. Add additional sweetener if needed.
