Description

These barbecue cauliflower tacos are only five ingredients but they’re filled with flavor! This simple recipe is perfect for a plant-based taco night!


Ingredients

Units Scale
  • 1 head cauliflower, cut into 1” pieces
  • 3/4 cup barbecue sauce, divided
  • 4 flour or corn tortillas
  • 1 avocado, thinly sliced
  • 1/2 cup shredded cabbage
  • Optional toppings: cilantro, sour cream, jalapeños, etc.

Instructions

Oven Method

  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. In a large bowl, toss the chopped cauliflower in 1/2 cup barbecue sauce.
  4. Spread the cauliflower in a single layer on the prepared baking sheet.
  5. Bake for 30 minutes, flipping once halfway through.
  6. Brush with remaining barbecue sauce after baking, if desired.
  7. Divide the cauliflower between the tortillas and top with avocado, cabbage, and any other toppings you like.

Air Fryer Method

  1. Preheat the air fryer to 400 degrees.
  2. In a large bowl, toss the chopped cauliflower in 1/2 cup barbecue sauce.
  3. Spread the cauliflower in a single layer in the air fryer basket. (If your basket is does not have a non-stick coating, use a silicone air fryer basket liner.)
  4. Bake for 30 minutes, flipping once halfway through.
  5. Brush with remaining barbecue sauce after air frying, if desired.
  6. Divide the cauliflower between the tortillas and top with avocado, cabbage, and any other toppings you like.
