Description

These baked oatmeal cups are filled with Greek yogurt and fruit for an easy and healthy treat! Try these for an easy breakfast or an afternoon snack!

For the oatmeal cups

  • 1 small ripe banana
  • 3/4 cup rolled oats
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Filling ideas

  • Greek yogurt
  • Fresh berries
  • Shredded coconut
  • Granola

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mash the banana. Add rolled oats, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix well until all ingredients are combined.
  3. Grease a muffin tin and evenly distribute the oat mixture into the cups. Use the back of a spoon to press down the center of the mixture to form a shallow cup.
  4. Bake the oatmeal cups for 25 minutes or until they turn golden brown. Remove from the oven and allow them to cool completely.
  5. Once cooled, fill each cup with a dollop of Greek yogurt and add your favorite toppings.
