Description
This apple cinnamon baked oatmeal is a hearty and filling breakfast with just the right amount of sweetness. Add a drizzle of maple syrup on top of this vegan oatmeal and breakfast is ready!

- 2 cups rolled oats
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chia seeds
- 1 teaspoon vanilla
- 2 tablespoons maple syrup
- 1 1/2 cups almond milk
- 1 small apple, diced
Instructions
- Preheat oven to 375 degrees
- Spray an 8×8 baking dish or a 10″ pie pan with non-stick cooking spray.
- In a large bowl, combine the oats, baking powder, cinnamon salt and chia seeds. Stir until combined.
- Add the vanilla, maple syrup, and almond milk. Stir until well combined.
- Gently fold in the apples until just mixed.
- Bake for 30-35 minutes until brown on the edges.
- Let cool for 15 minutes before slicing.
- Cut into 6 pieces.
