Description

This apple cinnamon baked oatmeal is a hearty and filling breakfast with just the right amount of sweetness. Add a drizzle of maple syrup on top of this vegan oatmeal and breakfast is ready!


Ingredients

  • 2 cups rolled oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup
  • 1 1/2 cups almond milk
  • 1 small apple, diced

Instructions

  1. Preheat oven to 375 degrees
  2. Spray an 8×8 baking dish or a 10″ pie pan with non-stick cooking spray.
  3. In a large bowl, combine the oats, baking powder, cinnamon salt and chia seeds. Stir until combined.
  4. Add the vanilla, maple syrup, and almond milk. Stir until well combined.
  5. Gently fold in the apples until just mixed.
  6. Bake for 30-35 minutes until brown on the edges.
  7. Let cool for 15 minutes before slicing.
  8. Cut into 6 pieces.
