Roasting butternut squash in the air fryer is an easy and delicious way to prepare this winter vegetable! Try adding this roasted butternut squash on top of a salad or enjoy it as a simple side dish!

- 1 small butternut squash, cut into 1/2” pieces
- 1 tablespoon olive oil
- Salt and pepper
Instructions
- Preheat the air fryer to 390 degrees. Toss the squash with a little bit of olive oil, salt, and pepper.
- Add the squash to the air fryer and use a spatula to spread it into a single layer. Be sure not to crowd the air fryer.
- After 10 minutes, use a spatula to flip the squash and then continue to cook for 5-10 minutes until golden brown.
