Vegetarian White Bean Chili Recipe

This rich and creamy white bean chili is made with cannellini beans,  chickpeas, and salsa verde for a flavorful yet simple dish! By blending  some of the beans into a broth, we create a hearty texture that makes  this chili super satisfying.

You'll need: olive oil, yellow onion, garlic, salsa verde, vegetable broth, cannellini beans, chickpeas, sweet corn, cream cheese, and optional toppings.

In a large pot, heat olive oil over medium heat for 30 seconds. Add onion and sauté for 5 minutes until the onion is slightly translucent. Add garlic and continue to sauté for 1 minute.

Add salsa verde, vegetable broth, white beans, chickpeas, and corn.

Bring to a boil then reduce heat to medium-low and simmer for 15 minutes.

Transfer 1 cup of soup to a blender, add cream cheese, and blend until smooth. Be sure to allow steam to escape from the top of the  blender. Add blended soup back to the pot and stir to combine.
