Description

This spicy whipped ricotta only takes a few minutes to make and this creamy spread is delicious on a toasted baguette or your favorite crackers!


Ingredients

Scale
  • 1 cup whole milk ricotta cheese
  • 1 tablespoon olive oil (plus more for drizzling)
  • Salt to taste
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Bread or crackers for serving

Instructions

  1. In a stand mixer or food processor, blend the ricotta and olive oil for 5-6 minutes until it becomes fluffy and creamy. 
  2. Add salt to taste and mix until combined.
  3. Transfer to a bowl and sprinkle with red pepper flakes, if using.
  4. Drizzle with olive oil just before serving. 
  5. Serve with toasted bread or crackers

Notes

I found that a whisk attachment on a stand mixer was the easiest way to get this ricotta to be super light and fluffy but if you don’t have one, a hand mixer or a food processor can do the trick.
