I haven’t done a What I Ate Wednesday style post in a while but a few people asked me to bring it back, so here we go! I love reading what other people eat in a day because it’s a great way to get some new ideas! I hope this gives you a bit of inspiration.
I’ve been on a huge oatmeal kick lately. I’m not even sure what triggered it but I’ve had oats on repeat. It tends to keep me full until lunch, which is no easy task.
Breakfast was oats with raisins and apples. These were overnight oats, which means I soaked them in almond milk overnight. But even with overnight oats, I still like to heat them in the microwave for a minute or two so it’s warm! I usually add a pinch of brown sugar for sweetness. I normally add peanut butter and banana but sometimes I’ll switch it up with dried fruit.
This tortilla chili was actually from Veestro, a plant-based meal delivery service. They sent me some of their meals last week and I was excited to try one. The flavor of this chili reminded me of Trader Joe’s black bean and corn enchiladas. I love those enchiladas so the seasonings hit the spot. I had a few tortilla chips on the side and this lunch was so satisfying.
I was super impressed with this meal and I can’t wait to try some of the others!
I’m not sure it really counts as a snack, but I met my friend Sara at Ellwood Thompson’s and I snagged this kombucha. I’d been wanting to try this flavor so I was excited to try it! It was really refreshing and not too sweet. I’d definitely get it again.
Dinner was a simple combination of roasted broccoli, red potatoes, and chickpeas. I love an easy “tray” dinner and this is one of Alex’s favorites, too. The recipe is similar to this one, but we used broccoli instead of asparagus.

On Tuesdays, our small group from church comes over and last night, someone brought Girl Scout cookies! There is a new cookie called a “Thanks-a-lot” which was a shortbread cookie with a chocolate bottom. I didn’t get a chance to snap a picture but I thoroughly enjoyed two of them! It was a nice way to end a delicious day of eating!
