Vegan Cabbage Soup

This cozy cabbage soup is packed with a variety of vegetables making this the perfect meal when you want to enjoy something light but  satisfying.

You'll need: olive oil,  onion, carrots, celery, garlic, Italian seasoning, cabbage, broth, diced tomatoes, cannellini beans, lemon juice, and salt.

In a large pot or dutch oven, add olive oil, onion, carrot, and celery and sauté over medium-low heat for 5 minutes. Add garlic and spices and continue to sauté for 2 minutes.

Add cabbage and continue to sauté for 5 minutes.

Add the vegetable broth, tomatoes, and beans and bring to a simmer. Simmer for 10 minutes or until vegetables are tender.

Add lemon juice. Season with salt to taste.
