- 1 tablespoon butter
- 1 small yellow onion, chopped
- 4 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 2 tablespoons tomato paste
- 3 cups vegetable broth
- 28oz can whole peeled tomatoes
- 1/4 cup heavy cream or cashew cream
- 4oz feta cheese
Instructions
- Melt the butter in a large pot over medium heat. Add the onion and cook for 5–7 minutes until soft and translucent.
- Stir in the garlic, salt, and oregano and cook for another minute until fragrant.
- Add the tomato paste and cook, stirring constantly, for 1–2 minutes.
- Pour in the vegetable broth and add the canned tomatoes with their juices. Break the tomatoes apart slightly with your spoon. Bring to a simmer, reduce heat, and cook uncovered for 15–20 minutes.
- Carefully transfer to a blender, add the heavy cream and feta, and blend until smooth.
