Brown Butter Oatmeal Chocolate Chip Cookies is a bit of a mouthful for a recipe title, but let me tell you, these cookies live up to their name! They have almost a toffee-flavor thanks to the combination of browned butter and coconut sugar. I’m absolutely obsessed with these cookies!

These tasty cookies take just 10 ingredients and you can make this recipe in one bowl, so clean up is quick and easy! Chocolate chip cookies are my favorite, and this recipe takes that classic taste to the next level!

Substitution Suggestions

  • If you want to avoid eggs, you can use a flax egg! To make a flax egg, mix together 1 tablespoon flaxseed meal with 2 1/2 tablespoons of water. Let it sit for 5 minutes until it thickens, then use it in place of the egg in the recipe below.
  • Trying to avoid dairy? Unfortunately, many vegan “butter” substitutes will not brown. You can still make this recipe with melted vegan butter, but you won’t be able to get the same browning effect.
  • If you don’t have coconut sugar, you can substitute for brown sugar. Lightly pack the sugar to measure.

How to Brown Butter

Browning the butter is simple, but you do need to keep a close eye on it to ensure it doesn’t burn. Heat a large skillet over medium heat and melt the butter. As it starts to foam, whisk it frequently until you start to see brown bits on the bottom. It will also start to smell like toffee. After 3-4 minutes, remove it from heat and whisk until slightly cooked.

Tips for Perfect Brown Butter Oatmeal Chocolate Chip Cookies

  • The cookies will spread on the baking sheet, so be sure to leave a few inches between cookies.
  • You can use semi-sweet or dark chocolate chips. I actually like to pulse chocolate chips in the blender or food processor for a few seconds, to create more variety in the size of the chocolate pieces.
  • Be sure the sugar and butter mixture isn’t hot when you add the egg. It doesn’t have to be completely cooled, but it should only be slightly warm.

Description

These Brown Butter Oatmeal Chocolate Chip Cookies are soft and chewy with a hint of toffee flavor and plenty of chocolate. These are a tasty treat for the holidays and beyond!


Ingredients

Scale
  • ½ cup unsalted butter
  • 1 cup coconut sugar or brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • â…“ cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large skillet, melt the butter over medium heat. Continue to cook over medium heat, whisking occasionally, until the butter is golden brown in color, about 3-4 minutes. You should see little browned bits at the bottom. Remove from heat.
  3. In a large bowl, combine the coconut sugar and browned butter.
  4. Once the mixture has cooled, stir in the egg and vanilla.
  5. Add the flour, rolled oats, baking soda, baking powder, salt, and chocolate chips.
  6. Scoop into rounded tablespoons and place them 3-4 inches apart on a baking sheet.
  7. Bake for 8-9 minutes until browned.
  8. Remove from the oven and wait 3-5 mins before transferring to a cooling rack.
