Description
This salad pizza is a family favorite! Crispy pizza crust, melty cheese, and a warm arugula salad make a winning combination for a tasty, healthy dinner!

For the pizza:
- 1 (14″) pizza crust (I used a pre-cooked one but you can use my easy flatbread pizza crust)
- 1/2 cup pizza sauce
- 3oz shredded mozzarella cheese
- 3 cups arugula
- 1 cup halved cherry tomatoes
- 1 bell pepper, seeded and chopped
- 3 large pepperoncini, chopped
- 3 tablespoons shaved Parmesan cheese
For the dressing:
- 1 tablespoon olive oil
- 1 tablespoon mayonnaise
- 1 tablespoon red wine vinegar
- 1 tablespoon pepperoncini juice (or additional red wine vinegar)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 400 degrees.
- Top the pizza crust with pizza sauce and sprinkle with cheese.
- Bake the pizza according to the crust directions. If you’re using dough, you’ll need to bake it for 25-30 minutes. If your crust is pre-cooked, it’ll cook in 10-12 minutes.
- In a small bowl, whisk together the olive oil, mayonnaise, red wine vinegar, pepperoncini juice, garlic powder, oregano, and salt.
- In a large bowl, combine the arugula, tomatoes, bell pepper, and pepperoncini.
- Drizzle the arugula with the dressing and toss to combine.
- Once the pizza is baked, remove it from the oven and immediately top it with the arugula salad. The heat from the pizza will help wilt the salad greens slightly.
- Top with Parmesan cheese and enjoy immediately.
