Thank you all for your lovely comments & encouragement from my first 5k! It was a great experience and I can’t wait to do it again!

As I mentioned in my previous post,. I needed some post run fuel and in my head, all meals should be sort of like the food pyramid. Now wait a second. I’m not saying it should look like the FDA’s food pyramid. I’ve got a few problems with that one (read Food Politics if you want more info on that…) but I feel like the premise is a good one. Incorporate fruits, veggies, protein, carbs, and a little fat into a meal, to hit all the essential nutrients! So why not put all these great things into one dish? And why not pizza? (Because, um, does anyone NOT like pizza?) So here you have it! Whole wheat pita for carbs + protein, tons of veggies on top, tomatoes, which are a fruit ๐Ÿ˜‰ and a little cheese, for an extra protein boost!

Perfect Pita Pizza

  •    1 whole wheat pita
  •    1/4 marinara or pizza sauce (I used the simple marinara sauce from TJ’s)
  •    1/2 small white onion
  •    1/2 cup red, green & yellow peppers, sliced
  •    1/4 cup mozzarella cheese
  •    1 tbsp nutritional yeast (for extra cheesy-ness and some B12 vitamin action)
  •    1 tbsp Parmesan cheese (I still use vegan Parmesan cheese)
  •    Optional toppings: kale, spinach, pine nuts, etc.

Heat your oven to 350 degrees. Slice up your onion and peppers into strips and saute in a bit of olive oil. While that’s cooking on the stove, and you’re able to multitask, brush the pita with olive oil lightly (I actually just spray it with olive oil spray. ha) and spread the marinara sauce over top. Peel your string cheese into little tiny pieces, and sprinkle over the pita. Pop it in the oven and let the cheese cook for a few minutes. Once the cheese just barely starts to brown, pull it out and top with the onions and peppers. Stick it back in the oven until the cheese browns. Pull it out, and then sprinkle with nooch and parmesan cheese. Slice, and let your tummy smile at the deliciousness you just made ๐Ÿ™‚
