Description

These mini taco cups are the perfect appetizer made with crispy wonton wrappers, creamy refried beans, and melty cheese. They’re baked until crispy, then topped with salsa, jalapeños, and fresh cilantro for the perfect party snack!


Ingredients

  • 24 wonton wrappers
  • 1 (15oz) can vegan refried beans
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 1/2 cup salsa
  • 1 small jalapeño, sliced

  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F. Lightly spray a 12-cup muffin tin with non-stick spray.
  2. Press one wonton wrapper into each muffin cup.
  3. Add a small spoonful of refried beans, then sprinkle with cheese.
  4. Place a second wonton wrapper on top at a slight angle (like a star shape), then repeat with more beans and cheese.
  5. Place the muffin tin in the oven and bake for 12-15 minutes, until the edges of the wontons are golden brown and crispy.

  6. Remove from oven and let cool slightly. Top with salsa, jalapeños, and cilantro.
