Description

This lemon ricotta pasta is ready in just 15 minutes! It’s a great dinner idea when you’re short on time. Plus, you only need 6 ingredients!


Ingredients

  • 8oz uncooked pasta
  • 1 cup whole milk ricotta cheese
  • 1 oz grated Parmesan
  • 2 tablespoons extra-virgin olive oil
  • Juice and zest of one lemon
  • 1/4 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Cook the pasta according to package directions. Reserve one cup of pasta water, then drain.
  2. In a bowl, whisk together the ricotta, Parmesan cheese, olive oil, lemon juice, lemon zest, garlic powder, and a large pinch of salt.
  3. Add 1/2 of the pasta water to the ricotta mix and whisk to combine.
  4. Toss the pasta with the ricotta sauce and season with additional salt to taste. If the sauce is too thick, drizzle in additional pasta water.
