- 4 large eggs
- 1 tablespoon milk or water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon butter or oil
- 4 medium flour tortillas (8-inch)
- 1 cup shredded cheese (cheddar, mozzarella, or blend)
- Optional: salsa, avocado, or hot sauce
Instructions
- Whisk eggs, milk, salt, and pepper in a bowl.
- Heat butter in a nonstick skillet over medium heat. Add eggs and cook, stirring gently until just set. Remove from heat.
- Place a tortilla in a clean skillet. Add 1/4 cup cheese and 1/4 of the eggs to half the tortilla. Fold over and cook 2–3 minutes per side, until golden brown and melty.
- Repeat with remaining tortillas.
- Slice and serve warm. Add your favorite toppings and enjoy!
