I don’t normally count or keep track of numbers when I’m eating, but every so often I will, just to see if I’m getting enough of certain things. Lately, I’ve noticed that my nails have been really brittle, and one reason can be a lack of protein. Obviously, as a vegetarian this is something I do have to be conscious off. Since I love carbs, it would be easy to just eat them for every meal, but that’s why paying attention to protein is important. I thought I’d join the “What I Ate Wednesday” party and show my protein for the day.
I had one cup of vanilla Greek yogurt with some frozen berries. I also drank a large glass of water, and a cup of coffee. I’m trying to drink more water, as well.
Total protein: 16g
I took some leftovers from Sunday night, when Alex and I took the leftovers from Saturday (the beans and quinoa) and turned it into a chili by adding in diced tomatoes and chickpeas. That’s meal recycling at its finest. Quinoa, chickpeas and beans all have a healthy dose of protein and this dish clocked in at about 15g of protein. I also ate an apple with it, which didn’t have much protein, but was delicious.
Total protein: 15g
I was craving macaroni and cheese, which is a little carb-heavy but the whole wheat pasta has protein, and so does the milk and cheese. Obviously I could have just drank a protein shake and called it a day, but where’s the fun in that? I made a macaroni and cheese dish for Alex and Lindsay and despite not following a recipe, this came out quite well. I can’t wait to share the recipe with you! I forced myself to remember the ingredients just in case I wanted to share.
I also put in all the ingredients into My Fitness Pal so I could calculate the protein. For just under 400 calories, this weighed in at a hefty 27 grams of protein. Not bad, right?
So for the day, we’re looking at 58g of protein. Ideally, as an adult, you want 1/2g of protein per pound of body weight, so this was perfect for me! (Kids need about 1g per pound of body weight.) Since I’m not trying to build a lot of muscle, I’ll stick with it.
