Description

This cottage cheese banana bread is incredibly moist and tender, and it’s packed with healthy ingredients. It’s naturally sweetened with honey and bananas, making it a tasty option for a cozy breakfast or snack. 


Ingredients

  • 3 ripe bananas, about 1 1/3 cup mashed (360g)
  • 1/3 cup avocado oil or vegetable oil
  • 1 egg
  • 1/3 cup honey
  • 3/4 cup whole milk cottage cheese
  • 1 teaspoon vanilla
  • 2 cups white whole wheat flour or all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees
  2. In stand mixer bowl or using a hand mixer, mash the bananas.
  3. Add the avocado oil, honey, egg, cottage cheese, and vanilla and continue to mix until combined.
  4. In a bowl combine flour, salt, baking soda, and baking powder and mix with a dry spoon.
  5. Add the dry ingredients to the wet ingredients and stir till combined, careful not to over mix.
  6. Pour batter into prepared pan and bake for 55 minutes. (Note, if the bread begins to brown quickly on top, cover loosely with foil for the final 15-20 minutes of baking.)
