Finally! It’s the season for Christmas cookies. I had some friends over last night to watch the Christmas classic, Home Alone, and it was a good excuse to kick off the baking season. To be truthful, I’m really not that much of a baker. I hate measuring things, and baking requires you to be a tad more specific… so admittedly my creations don’t always turn out well. Thankfully, I have a great sugar cookie recipe that leaves the cookies soft on the inside, and just a tad crispy on the outside. I made this sugar cookie recipe again, topped with butter cream frosting and sprinkles.

Sugar Cookies

Mmm you really can’t go wrong with sugar cookies. I made a few slight tweaks to the original recipe that I posed a couple of years ago, so here’s an updated version.

Simple Sugar Cookies

  • 1 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Additional sugar (for rolling)

In a mixing bowl, cream the butter and sugar. Add egg and vanilla. In a separate bowl, combine the flour, baking powder and baking soda, and gradually add it to the creamed mixture. Shape into 1 inch balls, and roll in sugar. Bake on a greased baking sheet and flatten, slightly. Bake at 350 degrees for 10-12 minutes.

I saved a few Christmas cookies for last night, when Alex and I celebrated Christmas. We’re going to be apart for the real Christmas day, and we have something going on every single night until we each head home to our families, so we had to celebrate a little early. I was so excited to give him his gifts, that I could hardly wait, so maybe it’s good we opened them early! I can’t post any pictures of the gifts just yet, as it might ruin a few surprises for other people, but it was a special night 🙂
