Ok let me start by saying I hardly ever get to have  Caesar salads, since 99% of them contain anchovies. It seems a little unfair, especially because I adore Parmesan cheese. So all of those delicious looking Caesar salads just taunt me at restaurants, while I settle for a plain salad, void of crunchy croutons and salty Parmesan. It’s a cruel world.

Then my life changed when I discovered this Vegetarian-friendly Caesar dressing. I’m absolutely obsessed with this salad topper. They make it with rainbows and unicorns Asiago and Parmesan cheese and it has such a strong flavor, you only need a little bit. (It’s not the lightest of dressings, but one tablespoon goes a long way.) So when I started pondering the idea of a chickpea wrap, I knew this dressing needed to make it’s way inside. It makes everything it touches turn to deliciousness.

The chickpeas and veggies make this wrap healthy, and the dressing adds the perfect punch of flavor. Of course, if you’re not a vegetarian, any Caesar dressing would work. If you’re vegan, you could whip up your own with a little vegan mayo and vegan Parmesan. It’s totally up to you. Of course, you’d have to leave off the feta.

So this was my super quick dinner last night, which would also make a perfect packed lunch.

Caesar Chickpea Wrap

Chickpea Caesar Wrap

Serves 2

  • 2 medium sized whole wheat wraps
  • 1 can chickpeas, rinsed and drained
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1 medium tomato, sliced
  • 2 tbsp vegetarian Caesar dressing
  • 2 tbsp crumbled feta

Heat the oven to 350. After you’ve rinsed and drained the chickpeas, toss them into a small bowl with with olive oil. Sprinkle with garlic, red pepper, and salt.  Roast in the oven for 15-20 minutes, or until browned and crispy. While those are cooking, it’s the perfect time to wash and slice your tomato. Once your chickpeas are roasted, this is really an assemble-and-go kind of recipe. And voila, a chickpea Caesar wrap! It doesn’t get much easier than that.

So far this week, I’m sticking to the meal plan! I’m also looooving the produce from Relay Foods. (You cannot beat fresh blackberries. You can’t.) Hopefully I’m able to stay on track the rest of the week!
