We remodeled our patio earlier this year and it’s been so much fun having a nice outdoor space. We’ve been using our pizza oven quite a bit and it’s been nice to have a comfy place to unwind. My dream has always been to have a spot where we can have people over and everyone can kick back and relax.

As a result, we’ve been sipping on quite a bit of rosé so I was excited to learn that Black Box Wines make a rosé! Ever since I went to the Zero Waste grocery store tour, I’ve been trying to find little ways to cut down on my consumption. I was pumped to learn that Black Box Wines require a lot less energy to produce and transport so they’re a good eco-friendly pick. They’re fully recyclable and they help yield 85% less packaging waste.

This rosé would go with just about anything but I paired it with these easy tortellini skewers. I love appetizers that can be made ahead of time so I don’t have to spend a lot of time in the kitchen when we have friends over. You can make these up to a day in advance, just wait until you’re ready to serve before adding the balsamic glaze!

Antipasto Skewer Ingredients

  • Tomatoes– I like to use cherry or grape tomatoes, in assorted colors. The red and yellow are a pretty combination!
  • Tortellini– You can use fresh or frozen tortellini. I like using a five cheese blend.
  • Fresh Mozzarella– Look for the small fresh mozzarella balls, which are usually sold in the specialty cheese section.
  • Fresh Basil- Don’t skip on the basil! If you can’t find it in the herb section of the grocery store, check and see if you can get a basil plant! Sometimes this is actually cheaper.
  • Balsamic Glaze– I usually just buy a bottle of balsamic glaze, but I’ll also share how to make it, if you want to turn balsamic vinegar into a glaze!

How to Make Antipasto Skewers

  • Cook the tortellini according to package directions then let them cool.
  • Wash and dry the tomatoes.
  • Add a tomato, tortellini, a mozzarella ball, one more tomato, and a basil leaf to each skewer.
  • Drizzle with balsamic glaze

If you can’t find small skewers, you can make mini versions on a toothpick by using just one tomato, one mozzarella ball or tortellini, and one basil leaf. These skewers paired perfectly with our rosé.

How to Make Balsamic Glaze

Balsamic glaze is affordable and easy to find but if you want to make your own at home, you can do it using balsamic vinegar. Balsamic glaze is actually the same as a balsamic reduction. The vinegar is cooked down until it’s thicker and it has a sweet flavor. It’s important to use a high quality balsamic vinegar.

  1. Add 1 cup of balsamic vinegar to a small pot and begin to cook over medium heat.
  2. Bring to a gentle boil then reduce the heat and let it simmer for about 20 minutes, stirring occasionally. The mixture should reduce to about half.
  3. It should be thick enough to coat the back of a spoon. Once it’s thickened, remove from heat and let cool.

For a sweeter glaze, add 1/4 cup of sugar to the vinegar in step 1. It may cook faster with sugar.

The Best Tortellini for Antipasto Skewers

I like the Buitoni Three Cheese Tortellini or the Rana tortellini. Both brands can be found in the refrigerated section of the grocery store. You can also use frozen tortellini if you prefer. You can even find shelf-stable tortellini which is great to keep in your pantry, so you can make these whenever you like without needing to run to the grocery store!

Ingredients

  • 1 9oz package of cheese tortellini
  • 1 cup cherry tomatoes
  • 1 cup yellow tomatoes
  • 1 cup mozzarella balls
  • A handful of fresh basil
  • 1 tablespoon balsamic glaze (see note)
  • 16 small wooden skewers

Instructions

  1. Cook the tortellini according to the package directions.
  2. While the tortellini is cooking, wash and dry the tomatoes.
  3. Let the tortellini cool, then assemble the skewers.
  4. Add 1 tortellini, 1 of each tomato, 1 mozzarella ball and 1 basil leaf to each skewer.
  5. Drizzle with balsamic glaze just before serving.

Notes

Balsamic glaze is often sold near the balsamic vinegar. It’s a reduction of balsamic vinegar so it’s a thicker consistency and it’s slightly sweeter flavor.
