Take your grilled cheese up a notch with this avocado grilled cheese! Made with toasted sourdough, gooey colby jack cheese, and creamy avocado, this simple sandwich is a perfect for a satisfying lunch!

- 4 slices sourdough bread
- 6 slices Colby-Jack cheese
- 1 ripe avocado, seeded and sliced thin
- Salt and black pepper to taste
- Smoked paprika to taste
- 1 tablespoon butter, room temperature
Instructions
- On one side of the bread, place one and a half slices of the cheese.
- On top of the cheese, place half of the sliced avocado. Season the avocado with salt, black pepper, and smoked paprika.
- Top the avocado with another one and a half slices of cheese, finishing with another slice of bread.
- Repeat these steps for the second sandwich.
- Butter the outward facing pieces of bread.
- Place a skillet over medium heat. When the pan is hot, put the sandwiches onto the skillet and allow to cook for 3-4 minutes or until the first side is brown.
- Flip the sandwiches and cover, reducing the heat to medium-low. Cook until the second side is brown and the cheese is melted.
- Cut the sandwiches in half and serve immediately.
