Description

Take your grilled cheese up a notch with this avocado grilled cheese! Made with toasted sourdough, gooey colby jack cheese, and creamy avocado, this simple sandwich is a perfect for a satisfying lunch!


Ingredients

  • 4 slices sourdough bread
  • 6 slices Colby-Jack cheese
  • 1 ripe avocado, seeded and sliced thin
  • Salt and black pepper to taste
  • Smoked paprika to taste
  • 1 tablespoon butter, room temperature

Instructions

  1. On one side of the bread, place one and a half slices of the cheese.
  2. On top of the cheese, place half of the sliced avocado. Season the avocado with salt, black pepper, and smoked paprika.
  3. Top the avocado with another one and a half slices of cheese, finishing with another slice of bread.
  4. Repeat these steps for the second sandwich.
  5. Butter the outward facing pieces of bread.
  6. Place a skillet over medium heat. When the pan is hot, put the sandwiches onto the skillet and allow to cook for 3-4 minutes or until the first side is brown.
  7. Flip the sandwiches and cover, reducing the heat to medium-low. Cook until the second side is brown and the cheese is melted.
  8. Cut the sandwiches in half and serve immediately.
