This slow cooker enchilada casserole is a hearty, vegetarian dinner. You can assemble this recipe in just a few minutes, so this tasty meal is incredibly easy!

You'll need: Tortillas, black beans, corn, diced tomatoes, enchilada sauce, taco seasoning, and  cheddar cheese.

Combine the tomatoes, black beans, corn, and taco seasoning.

Layer tortillas on the bottom of your slow cooker.

Add part of the bean and corn mixture in an even layer.

Top with cheese, then repeat layering with tortillas, bean mixture, and cheese.

For the final layer, cover with enchilada sauce, then top with cheese.

Cover with the lid and turn the slow cooker to high.

Cook for 2-2 1/2 hours until the cheese is melted.
