Vegan Pinto Bean "Pozole"

This vegan pozole recipe uses pinto beans instead of pork for a flavorful, meatless soup!

You'll need: Hominy, pinto beans, enchilada sauce, onion, garlic, and spices

Add the onion and olive oil to a large pot or pressure cooker

Add spices and saute for 3 minutes.

Add remaining ingredients and pressure cook for 18 minutes or simmer on the stovetop for 40 minutes
