Description

These easy zucchini pizza boats are a delicious way to satisfy your pizza craving in a low carb, healthy way! Fresh zucchini is stuffed with pizza sauce and mozzarella cheese for a quick dinner recipe the whole family will love!


Ingredients

Scale
  • 1 medium zucchini, sliced length-wise
  • 1/2 cup pizza sauce or marinara sauce
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon shredded Parmesan cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Using a spoon, gently scrape out the insides of the zucchini. You don’t want to scrape it all out, just the seedy, soft, inside. You should still have a lot of zucchini left. You’re just making a spot for sauce!
  3. Spoon the marinara sauce into the scooped out zucchini.
  4. Top with mozzarella and parmesan cheese
  5. Bake for 25-30 minutes, or until the cheese is bubbly and brown. Serve!
