By now, if you’ve been reading my blog, you’ve heard about the $2 challenge, where I’m eating on $2 per day for $5 days, in order to know what it feels like to not get to eat what and when you want. Then at the end of the week, I’ll donate the money I would have spent on food and groceries, to an organization that helps world hunger.

And since it’s What I Ate Wednesday, let me show you what you can eat on $2…

Breakfast:

  • banana – $.15
  • 1/2 cup almond milk $.20
  • Peanut butter $.25 (can’t resist the pb)

Total: $.60 cents

Lunch

  • Rice $.20
  • Beans $.30

I also added red pepper, salt, garlic, and pepper. Is that cheating?

Total: $.50

Snack

  • 2 Bananas $.15 (on in the morning, one in the evening)

Total: $.30

Dinner… well… this looked exactly like lunch…(See picture above)

  • Rice $.20
  • Beans $.30

Total $.50

Grand total for the day: $1.90

What do I miss the most? Greens! I’m pretty sure my body is craving some leafy-goodness. I’m sure everyone else is dying for some meat or dairy… but I’m craving my vegetables 🙂

As far as the rumbling in my tummy… that’s kind of the point. And it really does put things into perspective. It’s amazing that for so many of us, the problem is eating too much. It’s interesting to get a sense of what it’s like on the other side of the fence, even if it’s only for a few days.

My little $2 a day challenge seems so small when you put it in perspective. But small changes can have a big impact.
