Probably not. But this salad dressing is 🙂

I actually just adapted this from the Krishna dressing recipe that I posted earlier. I love it so much, I decided I needed to play with it. So here’s what went into it:

Vegan Caesar Dressing (It made like, 2 cups of dressing)

  • 3/4 cup almonds
  • 3/4 cup nutritional yeast
  • 1 cups water
  • 1/2 cups olive oil
  • 1/2 tsp dijon mustard
  • 3 tbsp vegan parmesan cheese (I like galaxy parmesan)
  • 2 cloves garlic (I used about 1/2 tsp of minced garlic, because I’m lazy)
  • 1 tsp salt

I just threw the almonds into the vitamix with the olive oil, and let that get nice and creamy. Then I tossed everything else in, and blended until smooth. This stuff was DELICIOUS. Seriously. I mean, I’m not a vegan anymore, but I think this stuff was tastier than cheese filled Caesar dressing. So simple. (And check out the nutritional stats for a 2 tbsp servings of this bad boy!)

I also didn’t have croutons know that I had croutons in my cabinet, so I toasted a slice of whole wheat bread with some Smart Balance Light, and sprinkled it with some garlic salt. Then I sliced it up and topped my salad with it. That’s right, lazy girl croutons.

In other news, I can’t get rid of this cold. Just when I thought the congestion was leaving, I woke up with a sore throat! Blech. Any cold remedies I should try?
