I’m so excited about this recipe! Vegetarian chili has been a long time favorite of mine. It’s so perfect for fall, and it can be packed with tons of vegetables, beans, and other good for you things.
So when Red Gold offered to send me some of their canned tomatoes for a review, I knew exactly what I wanted to use them for! Since I wanted to do a little twist on my typical vegetarian chili, (and since I was serving this up to meat eaters) I decided to add in some of Trader Joe’s Soy Chorizo. If you don’t have a TJ’s near by, you can use Morningstar Farms soy crumbles, Lightlife crumbles, or Boca crumbles. You just might want to add an additional kick of spices.
Red Gold sent me lots of different canned tomato varieties. I used the four below in this recipe: Diced tomatoes, petite diced tomatoes, tomato sauce, and petite diced with green chilies. It was the perfect blend for a chunky, spicy chili base.
Vegetarian Chorizo Chili
- 1 tbsp olive oil
- 1 medium onion
- 1 green bell pepper
- 1 package soy chorizo (or 1 1/2 cups soy crumbles)
- 3 cans diced tomatoes (the Red Gold really were delicious!)
- 1 can tomato sauce
- 1 can black beans
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp cumin
Start by dicing your onion and bell pepper, and saute in olive oil over medium heat until they begin to soften. Turn the heat up to high, and add in the chorizo. After a minute or two, add in all the tomatoes, beans and spices. Simmer over medium heat for about an hour. It’s super easy to throw all of this together! I served it with tortilla chips, and everyone else added some cheese on top. I’m not a big fan of cheese on my chili, so I left mine vegan-style. I tried not to make it too spicy… but I’m a bad judge of “too spicy”… it’s never too spicy.
I cooked this up for 3 meat eaters (although I couldn’t convince Conor to try it) and it seemed to go over quite well. I also had some leftover, which made an easy and fast packed lunch. Meals like this are so hearty and delicious. The perfect way to stay satisfied.
