Yesterday, I learned:

- There is no shame in buying bottled sauce, instead of making your own
A guy friend was coming over for dinner last night, which means I needed a man-friendly vegetarian recipe. Fast.
So I sent out a tweet for help.
What can I say? I like shortcuts.
So this meal turned out to be super simple, yet filling and delicious. Oh, you want to try it? Well lucky for you, I remember what I did:
- 1 package of Lightlife tempeh
- 1 bottle of teryiaki sauce
- 3 cups broccoli
- 4 tbsp olive oil
- 1 cup of brown rice
- pinch of ginger
- pinch of garlic
Cook the tempeh in the olive oil, until it starts to brown on the edges.
While you’re cooking the tempeh, find a guy to cook up some broccoli.
In a separate skillet, steam your broccoli however you like. We cooked ours in some olive oil, but you could also just use water. We added a pinch of garlic and a pinch of ginger, and just cooked it over medium heat until it started to soften. Then we added another 1/4 cup of teryiaki sauce.
In one more sauce pan, cook 1 cup of brown rice. (We used Minute rice, because we were hungry…) and toss it all on a plate.
This could totally be a new rotation in the last-minute-dinner rotation. Maybe I’ll start switching things up 😉
In other news, I tried making some gluten-free cookies for my gluten-adverse name twin.
