It doesn’t really feel like Monday to me, because Alex and I are on a West Coast vacation! We left Saturday, and are currently in Seattle, headed to Portland, Napa Valley, & San Francisco.
We spent yesterday morning walking around the sculpture gardens, taking in some beautiful scenery.
After a lot of walking around, we worked up an appetite, and stumbled upon a delicious brunch at a place called Barrel Thief. We checked out the menu before we totally decided, and as soon as I saw tofu, I knew we’d found a winning spot. Most brunch places aren’t all that vegetarian friendly, but this one had a great variety.
Alex and I split a flatbread with arugula, caramelized onions, roasted tomatoes, and avocado, plus a Tofu Scramble, pictured above, which had tofu, fresh kale, white beans, & roasted tomatoes. I absolutely loved the tofu and kale combo. I hardly ever actually cook kale, so I need to remember this down the road.
We also walked to a big open market browsing all of the vendors. We fell in love with the Fremont area, and ended up spending a good portion of the day browsing antique stores and bookstores.
Eventually, we worked up an appetite for lunch and headed to a little Mexican place called Pecado Bueno. The portions were huge so I couldn’t finish more than half my salad, but this Creamy Avocado Caesar Salad hit the spot. We also split a giant basket of chips and salsa. Basically my favorite thing ever.

After that, we headed to downtown to see the Gum Wall, as well as the legendary fish market. The weather was absolutely perfect so we ended up just walking around for hours, and even popped in the flagship REI store. Nothing was purchased, but it was a fun afternoon.
Later on, we met up with an old friend (Hi, Vishal!) and had a great time catching up over drinks. He gave us a little tour of his section of the city, and it was nice to have him navigating. I’m loving Seattle already!

Sticking to healthy on vacation isn’t easy, and it’s especially tricky when you’re really trying to not be “that person” who won’t do anything fun because they’re “watching what they’re eating”.
I’m not going to add up all the calories and stuff, since I’m showing you some random meals from different days. I did try to sneak in healthy food while tasting my way through the city. Please note that fro yo, wine, and macaroni and cheese were all consumed on this trip, but those pictures weren’t anything special!
So this is the What I Ate Wednesday: New York Edition
I got to meet Meredith from Dare You To (how gorgeous is she?!) and we took a trip to the Chobani store. It was amazing! I had a bowl of greek goodness topped with pistachios, chocolate, orange, and agave. It was super creamy and delicious. It was so much fun chatting with Meredith about blogging, food, and life in general! Why have I never put pistachios in my yogurt? New thing to try.
We stopped by the Smorgasburg festival in Brooklyn and I tried everything. From second row: Soy Hound Soymilk, McClures Spicy Pickles, and some kind of coffee infused chocolate which was amazing. For my actual lunch, I got some of this quinoa falafel, which was absolutely amazing. I have to try making falafel with quinoa…
We went to a little cafe called Once Upon a Tart and it was so adorable. I had a tomato and mozzarella sandwich, served with a lentil and feta salad. I forgot how much I love lentils! And obviously I’m still obsessed with feta. I need to recreate this salad.

Before I share this super easy 5 ingredient guacamole recipe with you, you need to meet my brother.
I wouldn’t say he’s a health food advocate (ok, not really at all. Although his wife does keep him in line.) but when our family got together, he announced he’d be making his “world famous guacamole” for us. Obviously, I was excited because 1. I love guacamole and 2. I don’t think I’ve ever seen my brother make anything but popcorn and macaroni and cheese.
He picked out his ingredients and started chopping things up in the kitchen.
It was only a few moments after he put the bowl on the table when we all went crazy for it. It’s some seriously delicious stuff, and it’s also simple enough to be added to the “5-ingredients or less” recipe list!Print
5 Ingredient Guacamole
This is our family’s favorite guacamole, courtesy of my brother!
- 4 avocados
- 1/2 purple onion
- 1 jalapeno
- Juice from 1 lime
- Slice the avocados in half and discard the pit.
- Using a large spoon, scoop out the avocado flesh.
- Dice the onion and the jalapenos.
- Juice the lime into the bowl and add salt to taste.
This 5 ingredient guacamole recipe is so simple but so delicious!

Hello from Boston! (Or more specifically, Spencer, Massachusetts)
I spent all day Thursday exploring the city with my parents.
We walked around the city, toured the Statehouse, and, oh yeah, apparently Boston has a baseball team that everyone loves 😉
Now I’ve gotta keep this short, because my dad has a mug of coffee waiting for me out here…
