As I mentioned in a previous post, I’d never really had a bowl of oatmeal. One time, in college, I tried one of those instant oatmeal packets, and it was just gross. But I thought it was time to give it another chance. I was envious all off the bloggers that love oats (I mean, Katie has a whole page dedicated to OIAJ!) but I had such a gross experience with them, I thought I needed to ease myself into it.
After some extensive research (what, you don’t extensively research what you’re going to eat for breakfast the next day? Weird.) I found these Chocolate Cake Batter Vegan Overnight Oats. Of course, in typical fashion, I make some tweaks here and there. So this is what I came up with:
Chocolate-y Vegan Overnight Oats (Adapted from Oh She Glow’s Recipe here)
- 1/3 cup oats
- 3/4 cup soymilk (I used silk light)
- 1 tbsp chia seeds
- 1 tbsp cocoa powder
- 6 drops vanilla stevia
Whisk together, and put in the fridge, covered, over night. I actually forgot to put the cocoa powder in, so I stirred it in the next morning.
After it is set and chocola-fied.
Then I whipped up some Chocolate Banana Softserve
- 1/2 frozen banana
- 4 cubes frozen soymilk + splash of non-frozen soymilk
- 2 packets of Truvia
- 1 tbsp cocoa
Blend in your blender, vita, or food processor until smooth.
I layered my Chocolatey Oats with my Chocolate Banana Soft Serve in a huge wine glass. (Things always taste better when put into a pretty glass!)
This was AH-MAZING. Seriously. It like, rocked my face off. For a minute, I forgot I was eating a healthy breakfast. (I put it into spark people to discover that this huge breakfast had less than 300 calories AND 14 grams of protein. Not to mention lots of fiber. YUM!)
It’s official. Oats are now my friend. Maybe even my best friend.
