Lighten Up!
I finally caught up with the rest of the blog world, and made a light box! (Thank you, (Never)Homemaker!)
Check it out!
It was a fun afternoon project, and it made today’s eats look as delicious as they were!
Lunch: TJ’s chopped veggies, topped with garlic hummus
And for dinner, I decided to bust out the rice cooker my brother and sister-in-law got my for christmas, and whip up the recipe below:
Mexican Mess (sorry, I couldn’t think of a good name for this, and it does sort of look like a mess)
- 1/4 cup long grain brown rice
- 3/4 cup bell peppers (I used all three colors!)
- 1 medium onion
- 1/2 cup black beans
- 1 tsp lime juice
- black pepper
- garlic salt
- 1 tbsp nutritional yeast
I just cooked the rice in the rice cooker, while I sauted the onion and peppers in a skillet (sprayed with a little olive oil) with lime juice, black pepper, and garlic salt. Then once the rice was basically cooked, I tossed in the peppers and beans, and let them all sit in the cooker for a bit. Then I took it out and topped it with nutritional yeast, for an extra vitamin/protein boost! This was SO delicious and easy to make!
Anyone got any photo taking tips they want to share? I’m hoping to get a basic version of Photoshop soon, so I can play around with editing!
I hope you’re all having a fantastic weekend!

I’ve been wanting to make a light box forever! I need to bump it up on my priority list!
I eat the same breakfast most of the time. But right now I’ve been microwaving frozen mixed berries with some chocolate protein powder. It’s like a chunky smoothie bowl. Sounds gross, but I promise it’s good.
And as far as the tofu goes — invest in a Tofu Xpress. I think it’s $45, but it’s the best investment. It presses tofu perfectly every time (while it sits forgotten in your fridge). Then either marinade for about an hour (the press comes with a handy marinating lid so you can do it all in one box) or toss in some seasonings, shake, and saute or bake. The hardest (but most fun) part about tofu is figuring out how to season it. I guarantee, you absolutely can’t mess it up.
i never even KNEW of this lightbox thing!! i guess i’m further behind than you thought you were lol! 😀 is there some way for me to build one for FACE shots? haha. (vain, i know.) them food look HELLA goooood.
Hahaha I’m not sure how it works for head shots 😉 I’m sur there is a way to play with the lighting to make it similar. I’ll have to ask my best friend, she’s a photographer!
I bookmarked this recipe! It looks delicious 🙂
I’m glad I’m not the only one who can’t think of recipe names! Mexican Mess sounds good to me.
Hooray for the lightbox, awesome pics!
Wow! I’m ridiculously impressed that you made a light box yourself. I definitely haven’t hopped on the light-box train yet, but I certainly hope to at some point this year. Maybe that would end my frustration with night-time photographs!
Your meals look great 🙂
I am relatively new to the bloggy world and didn’t realize how important pics are! Everything I have read lead me to believe I am in the market for a new, better camera and possibly a light box 🙂

Yumm, anything with nutritional yeast is automatically a favourite of mine 😀 By the way, what is that purple veggie!? It’s so cool!!
Cabbage! I love the crunch! 🙂
