I have discovered a love for quinoa. Quinoa has such amazing benefits and is such a great source of protein, that I try to consume it as much as I can. I enjoy it regularly as a hot cereal or as a salad, but my favorite use for it is in baking!

For this recipe, we’re going to use cooked quinoa. I recommend cooking it in a rice cooker if you have one! But you can also make it on the stove if you prefer.

How to Cook Quinoa

  1. First, rinse the quinoa in a fine mesh strainer.
  2. Then, combine 2 parts water and 1 part quinoa and bring to a boil.
  3. Simmer for 15-20 minutes or until all the water is absorbed.
  4. Let cool, then fluff with a fork.

Types of Quinoa

  • There are a few different types of quinoa. Some quinoa is a light yellow but there are also red and darker brown varieties. 
  • Quinoa is typically sold dry, in bags or boxes. You’ll usually find it in the same aisle as rice.

Ingredients

Units Scale
  • 1 cup cooked quinoa
  • 1/4 cup applesauce
  • 2 cup whole wheat flour
  • 1/2 cup honey
  • 1 teaspoon salt
  • 3/4 cup almond milk
  • 1/2 cup dried cranberries
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoon sunflower seeds

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk flour, quinoa, salt, baking powder, cinnamon, and cranberries together.
  3. In another bowl, whisk applesauce, honey, milk, vanilla, and the flax egg.
  4. Add wet ingredients to the dry and mix well.
  5. Pour into muffin tins and top with sunflower seeds.
  6. Bake for 25 minutes or until a toothpick comes out clean!
