It’s Monday. Seems like a good time for an easy recipe, right? I mean, you didn’t want to spend your whole day in the kitchen, did you? Well if you do… I’ve got plenty of other ideas for you. But if you just want an easy, healthy snack that will cool you down during this crazy heat, stick around. These frozen yogurt bites will do the trick.

Frozen Yogurt Bites Ingredients

  • Yogurt– I recommend a full fat or higher fat vanilla yogurt. If you want to use plain yogurt, I recommend adding a sweetener, like honey or maple syrup.
  • Coconut oil– A little coconut oil makes these a little softer so they’re easy to eat.
  • Fruit– I like using frozen wild blueberries which are smaller and easier to incorporate into these bites.
  • Granola– See my granola recommendations below!

How to Make Frozen Yogurt Bites

Start by lining a muffin tin with liners. I like using silicone liners because they’re reusable and easier to remove! Then fill each cup with a small amount of yogurt.

Add blueberries or chopped frozen fruit.

Add more yogurt, then sprinkle granola on top.

Place the pan in the freezer for at least 3 hours or until set!

Tips for the Best Frozen Yogurt Bites

  • I recommend using full fat or 2% fat yogurt. Fat free yogurt doesn’t freeze as well and has more of an icy taste.
  • Don’t make the yogurt bites too big, or they’ll be hard to eat. Small is best!
  • Let them thaw for a minute or two before eating. This makes them a little softer!

The shortcut to this recipe involved using pre-made granola. But obviously, if you’re feeling ambitious, you can make your own. Here are some of my favorite granola recipes:

You’ll need about 1/2 cup of granola, so use whatever you like. I used what I had left of the Walnut Granola and then made another batch with Purely Elizabeth’s Ancient Grains Granola. So you do you. Follow your heart. Or maybe just your tastebuds.

Ingredients

  • 1 cup full-fat vanilla Greek yogurt
  • 1 tablespoon melted coconut oil
  • 1/2 cup wild frozen blueberries
  • 1/2 cup granola

Instructions

  1. Line a muffin tin with paper or silicone liners (silicone works a little better but paper can work too)
  2. Mix the Greek yogurt and the coconut oil until combined.
  3. Drop 1 1/2 tablespoons of Greek yogurt in the bottom of each cup.
  4. Add 1 tablespoon wild blueberries.
  5. Add another tablespoon of Greek yogurt on top.
  6. Sprinkle granola on top. Make sure it’s a thin layer or press it into the Greek yogurt, so it’ll stick.
  7. You should be able to fill about 8-10 muffin cups.
  8. Pop it in the freezer for 3 hours or until set.
  9. Store them in an air tight container and eat them straight from the freezer!
